Oatmeal Creme Pies

These delightful treats take a little time to bake and assemble, but you’ll taste the love and delicious goodness in every bite. They are an incredible homemade version of store-bought oatmeal creme pies.
For the Cookies
- 1 cup butter or vegetable shortening
- 3 cups brown sugar, packed
- 4 eggs
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 3 cups flour
- 3 cups old-fashioned rolled oats
Filling
- 2 egg whites
- 2 teaspoons vanilla
- 4 Tablespoons milk
- 4 cups powdered sugar
- 1 cup vegetable shortening
For the Cookies
Preheat oven to 350 degrees.
Cream together shortening or butter, brown sugar, and eggs. Add remaining ingredients and mix well. A stand mixer works best, because the dough gets thick. Use a cookie scoop, or ice cream school if you want larger sandwiches, and place on cookie sheet. Flatten slightly with fingers.
Bake for about 10 minutes.
When cool, turn a cookie over and spread filling on the side that was on the pan when baking. Place a second cookie on top.
For the Filling
Beat egg whites until stiff peaks form. Add vanilla, milk, and 2 cups powdered sugar. Beat thoroughly and add the remaining 2 cups powdered sugar and the shortening. Beat until smooth and fluffy.
