Rainbow or Fun Colored Cupcakes

These yummy basic cupcakes are simple to make and can be easily customized for flavor and color. For Christmas, color 1/3 batter green, 1/3 batter red, and leave 1/3 white. This recipe was submitted to the Rohrer Family and Friends cookbook by Chloe Robinson.
- 1 Cup White sugar
- 1/2 Cup Butter
- 2 Eggs
- 2 Teaspoons Vanilla extract Or flavoring of choice
- 1 1/2 Cup Flour
- 1 3/4 Teaspoon Baking powder
- 1/2 Cup Milk
- Food coloring of choice
Preheat oven to 350 degrees. Line Cupcake pans with liners.
In medium bowl, cream sugar and butter together. Beat in the eggs one at a time, then stir in flavoring. Combine flour and baking powder and add to cream mixture. Mix well. Add milk and beat until batter is smooth.
Divide batter evenly into as many bowls as colors you are using. Example, we used four colors here, so we used four small bowls. Add food coloring to each bowl and mix until well incorporated. Evenly distribute batter by layers into cups in order you prefer. As you go, gently spread each layer with the back of a spoon to cover previous layer.
Bake for 20-25 minutes.
Cool completely and frost with Seven Minute Frosting Or frosting of choice.
